Do you often struggle with finding healthy snacks to pack? Or maybe you frequently find yourself out and about when those hunger pains start to set in, and it seems as if your only option is to stop in at a store, cafe, or fast-food joint to pick up something quick?

It’s easy to derail our healthy eating plans with less-than-optimal snacking on a regular basis. The fix? These energy bites are the perfect snack to whip up in a big batch and tuck away in individual portions to grab straight from the fridge on your way out the door!

For those of you reading pumpkin in the ingredients and wondering how this recipe could be Low FODMAP, this is a great example of the importance of portion sizes and checking in with your Monash Low FODMAP app frequently. Canned pumpkin is a “yellow light” food, but in serving sizes of ¼ cup or less, the FODMAP levels are low enough that it is considered a “green light” food. So, in a recipe that calls for 1 cup of canned pumpkin and makes about 30 energy bites, the low levels of FODMAPs from the pumpkin shouldn’t be causing you symptoms, even if you eat 3 or 4 at a time 😉

Chocolate Chip Pumpkin Spice Energy Bites

Time: 10 minutes prep, 1 hour chill

Makes: 24-36 bites

INGREDIENTS

3 cups rolled oats

1 cup pumpkin puree

1 cup nut butter of choice

1/2 cup maple syrup

1/2 cup chia seeds

1/2 cup chocolate chips

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp cloves

1/2 tbsp vanilla

1/4 tsp salt

INSTRUCTIONS

Add all ingredients to a large bowl, mix well.

Form 1-inch balls and place on a baking sheet. Cover and freeze for one hour.

Store in the fridge or freezer.
